You can eat these muffins hot or cold. Ideal for on the road or at work. I use mushrooms to make this recipe. If you are not so fond of that, use other vegetables such as zucchini or bell pepper. Now let’s start with the recipe!
- 2 eggs
- 1/2 onion
- 1 clove of garlic
- 75 g mushrooms
- pinch of pepper
- olive oil
- 30+ cheese (20 g)
1. Preheat the oven to 200 degrees. Cut the onion, garlic and mushrooms into small pieces.
2. Take the frying pan and fry the vegetables. Meanwhile, you grease 4 muffin tins with olive oil.
3. Break the eggs in a bowl and add the mushroom mixture together with the cheese. Divide the batter over the muffin tins with a pinch of pepper and put in the oven for 20 minutes.
4. Once the 20 minutes have passed, let the muffins stand for another 5 minutes in the oven. Meanwhile, chop the chives and sprinkle over the muffins. Enjoy your meal!
